For Chef Tomoharu Shono, ramen has always been more than a meal.

Everything comes together in one bowl: the ingredients, the people who produce them, the craft of those who prepare them and the character of the place in which it is served.

This is the belief at the heart of MENSHO.

THE FARM TO BOWL PHILOSOPHY

MENSHO’s Farm to Bowl philosophy begins with respect.

'Respect for ingredients. Respect for the people who grow and produce them. Respect for the craft required to reveal their fullest character.

MENSHO seeks to understand where its ingredients come from and the stories behind them, bringing producers and diners closer together through food. Each ingredient is handled thoughtfully, prepared with care and used with as little waste as possible.

This philosophy is also grounded in place. As MENSHO has grown from Tokyo to cities around the world, each restaurant has developed its own menu and identity, shaped by its local ingredients, culture and community.

That is why no two MENSHO experiences are exactly the same. In Sydney, the philosophy continues through ramen that brings Japanese craftsmanship together with the quality, diversity and character of Australian produce.

Every bowl belongs to MENSHO. Every bowl also belongs to the place in which it was created.

Creating the Bowl of Tomorrow

Chef Shono founded Menya Shono in Tokyo in 2005 with a simple purpose: to bring joy to the people in front of him, one carefully crafted bowl at a time.

His belief in ramen deepened following the 2011 earthquake in northeastern Japan. MENSHO travelled to Ishinomaki to serve hot ramen to communities living without electricity or gas. The warmth, comfort and smiles created by those bowls revealed the extraordinary power food can have in people’s lives.

That experience became an important part of MENSHO’s purpose.

Today, MENSHO continues to explore what ramen can become. The goal is not simply to reproduce the familiar, but to create ramen that is more thoughtful, meaningful and connected to the world around it.

The Pursuit of Excellence.

At MENSHO, Excellence is Not A Fixed Destination. It is An Ongoing Pursuit.

Chef Shono approaches ramen with curiosity: learning from producers, exploring ingredients, refining techniques and responding to the character of each location. Tradition provides the foundation, but discovery keeps the craft moving forward.

Every element of the bowl is considered. Flavour, texture, aroma, balance and presentation must come together as one complete experience.

This dedication can be tasted in MENSHO’s deeply layered broths, handcrafted noodles and distinctive creations. Yet excellence is not measured by complexity alone. It is found in care, harmony and the ability of a bowl to leave a lasting impression.

At Victoria Cross, MENSHO TOKYO VicX reflects the evolving character of North Sydney through a menu created especially for its community and location.

The menus are different, but the philosophy is shared: respect the source, honour the craft and create a bowl rooted in its place.
